Roasted Asparagus with Bacon, Fried Egg and Hollaindaise Sauce

If you walk into our home on a typical weekend morning you will always get the smell of bacon cooking and what a beautiful smell that is. We love bacon and it is so good for you!

Here are some of the reasons why bacon is Good for you.
The protein found in bacon helps to maintain your energy level.
Bacon is also good to lower the body's blood pressure and blood sugar levels which help to alleviate diabetes and heart disease.
Bacon has less total fat, cholesterol and saturated fat than many other meats
Bacon is high in a nutrient called choline, which helps to increase our memory and intelligence (so eat up before you write that final exam)

Anyhoo, now that I have enlightened you on some of the nutritional facts about bacon, let me share my recipe with you. The thing is that since we love bacon in our home, I have to find new ways to eat this wonder "fat" otherwise I will be bored.
So here is my Roasted Asparagus and Bacon recipe.



Ingredients
500 grams fresh asparagus
220 grams rindless streaky bacon
few plugs of olive oil
unsalted butter
4 eggs
salt
pepper

For Hollandaise Sauce
2 extra large eggs yolks
1 tablespoon freshly squeezed lemon juice
1 teaspoon salt
1/2 teaspoon pepper
6 tablespoons unsalted butter
dash of paprika

Method
Preheat oven to 180 degrees
Place the asparagus on a baking sheet and drizzle with olive oil, salt and pepper
Roast for 8-10 minutes
At the same time, place the bacon on another baking tray lined with aluminium foil and bake for 7 minutes until done
Melt the butter in a saucepan and fry eggs to your desire



Method for Hollandaise Sauce
In the jar of a blender, add egg yolks, lemon juice, salt, pepper and paprika and process on low for 20 seconds
In a saucepan, melt your butter until it starts to sizzle
Ensure that your blender is on low and slowly start to add the hot butter from the top to the egg mixture
Blend for 30 seconds until sauce is thick
Use immediately
To assemble, place asparagus on your plate, top with bacon, drizzle with hollandaise sauce and place your eggs on top.
